Cajun Seasoning

3 Tablespoons Kosher salt
1 Tablespoon cayenne pepper
1 Tablespoon garlic powder
1 Tablespoon sweet paprika
1 1/2 teaspoons dried oregano
1 1/2 teaspoons dried thyme
1 1/2 teaspoons ground black pepper
1 1/2 teaspoons onion powder

Burns Family Chili Seasoning

Gift-giving note:  triple-batch fills two 10 oz. jars

1/4 cup chili powder (mixed seasoning)
2 Tablespoons ground cumin
2 Tablespoons instant minced onion
1 Tablespoon paprika
2 teaspoons dried cilantro, crushed
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon ground red pepper (cayenne)
1/2 teaspoons leaf thyme, crushed
1/4 teaspoon ground cinnamon

Da’s Chili:

Brown 1 lb. ground beef.  Add 2 Tablespoons chili seasoning, stir, and cook for a few minutes.  Add 2 cups chicken broth and 8 oz. tomato sauce.  Simmer ’til dinnertime.

Ma’s Chili:

Saute:
1 onion, diced
2 cloves garlic, minced
1 stalk celery, halved lengthwise and diced
1 red or green pepper, chopped

Meanwhile, brown 1 lb ground beef.  Drain fat.  Add 2 Tbs chili seasoning, stir, and cook for a few minutes.  Add sauteed vegetables and:

1 can chili beans
1 can black beans or kidney beans
1 can diced tomatoes (in juice or puree)
1  8 oz can tomato sauce
1 can chicken broth
1 can green chilis (optional)

Simmer uncovered (with a splatter screen) until dinnertime.

Bulk recipe:

7.5 cups chili powder (mixed seasoning)
3.75 cups cumin
3.75 cups instant minced onion
1.75 cups paprika
1.25 cups dried cilantro
1/4 cup + 1 Tablespoon salt
1/2 cup + 2 Tablespoons garlic powder
1/4 cup + 1 Tablespoon ground California chili
1/4 cup + 1 Tablespoon dried thyme
2 Tablespoons + 2 teaspoons cinnamon

13 oz chili powder = 3 cups
