Zucchini & Corn with Onion & Jalapeno

Serves 1

1 Tablespoon olive oil
1/2 medium-sized zucchini, 1/4″ dice
1 slice red onion, diced
1/4 cup frozen corn, thawed
1/2 jalapeno, seeded and chopped

Heat the olive oil in a skillet over medium-high heat.  When hot add the zucchini and onion.  Let it cook undisturbed until it starts to brown on the first side.  Add the jalapeno and corn, stir,  and let cook, stirring only occasionally, until as brown as you like it.
