Pecan Sandies


Slightly modified from a Home Plates recipe in the SJ Mercury News by Margaret Nelson

OK, so these are pretty great.

Makes about 3 dozen

1 cup butter, softened
1/3 cup granulated sugar
2 teaspoons vanilla
2 teaspoons water
1 cup whole wheat pastry flour
1 cup all-purpose flour
1 cup chopped glazed pecans
3/4 cup chopped Ghirardelli 60% chocolate chips

Preheat oven to 325 degrees F.  Line baking sheet with parchment.  In electric mixer, cream butter and sugar.  Add vanilla and water and mix well.  Add flour, pecans, and chocolate chips and mix well.  Using 2 teaspoon scoop, place on baking sheet.  Flatten with fingers until about 1/3″ thick.  Bake for 20-25 minutes, until the edges begin to brown.

  2. When you say “Glazed pecans”, Kristin, do you mean like candied, with a sugar syrup glaze? Do you buy them or make them yourself? I’m thinking these cookies might be for my next baking day at work. They look wonderful!
