Grilled Chicken Thighs

3/4 cup low-sodium soy sauce
1/3 cup packed dark brown sugar
2 Tablespoons chopped peeled fresh ginger
4 large garlic cloves, peeled and chopped
8-12 skinless boneless chicken thighs

Stir soy sauce, brown sugar, ginger and garlic together in a plastic container large enough to hold the chicken in a single layer.  Or you can use a zip-top bag.  Add chicken, cover, and refrigerate until you light the coals.

Prepare barbecue (medium-high heat).  Brush grill with oil.  Remove chicken from marinade, discarding leftover marinade.  Grill chicken until cooked through, about 5 minutes per side.

Serve with

steamed rice
sliced cucumbers with sesame ginger dressing
snow peas
sauteed quartered mushrooms
