Sean’s Favorite Meatloaf

Slightly adapted from a recipe by Lucinda Scala Quinn, as heard on The Splendid Table

3/4 cup dry whole wheat bread crumbs
1/3 cup 2% milk
1 egg
1.5 lbs 85% lean ground beef (Whole Foods)
1/2 large onion, grated on large holes of a box grater
1 large carrot, grated on tiny grater
1/3 cup ketchup
1/2 teaspoon pepper
1 1/2 teaspoons kosher salt

Preheat oven to 350 degrees F.  Stir the breadcrumbs and milk together in a large mixing bowl.  Set aside while you grate the onion and carrot.  Add all the ingredients to the bowl and stir with a batter beater or mix with your hands.  Put the meat mixture into a 6×9″ dish and shape into a loaf that does not touch the sides of the pan. Bake for 45-60 minutes, until an instant-read thermometer reads 160 degrees F.  Let stand for 5-10 minutes before slicing.
