Simple Green Lentils

From the back of the Trader Joe’s “Whole Small Green Lentils” package

Serves 4

1 cup whole small green lentils, sorted and rinsed
2 1/4 cups low-sodium chicken or vegetable broth
1/4 cup white wine
1 teaspoon black pepper, or to taste
1 teaspoon TJ’s Everyday Seasoning to taste (I didn’t have any, and didn’t know what was in it, so I used Herbes de Provence, which was very nice)
salt to taste

Put lentils, broth, wine and seasoning (except salt to taste) in a sauce pan and bring to a boil.  Reduce heat to low, cover with a lid, and simmer until tender and the liquid is almost absorbed, 35 to 40 minutes.  Salt to taste and serve as is, or add toppings of your choice.

Optional toppings:
balsamic glaze
poached egg
caramelized onions
crisp chopped pancetta
spicy italian sausages
cooked greens
grilled vegetables
pine nuts
crumbled goat cheese
