Plain Rice

Turn knob for large burner to 6 (medium).

Film the 2 quart covered Revere saucepan with canola oil

Set the pan on the burner, making sure the pan is centered so it gets all the heat it needs.

Add 1 cup long-grain white rice and 1/2 teaspoon salt.

Stir with wooden spoon until all grains are coated

Leave on heat for a minute or two

Add 1  1/2 cups filtered water and cover the pan.

When the water comes to a full boil, turn the heat down to between 1 and 2 (medium-low).

Set timer for 25 minutes.  Do not lift the lid.

When the timer goes off, turn off the burner, leave the pan on burner, and set timer for 20 more minutes.

When the timer goes off the second time, remove the lid and check the rice.  If it’s tender enough, fluff it with a long-tined fork and serve.  If it’s still hard and pointy, run a fork through the rice and turn it out into a large glass casserole, add 1 Tablespoon of water, cover and microwave on high for 5 minutes.  Leave covered for 10 more minutes.  That should do it.
