To Try (and modify?): Chicken Salad Casserole

Certified Women’s Club fare

4 cups diced cooked chicken or turkey
3 cups diced celery (yes!)
1/4 cup diced green pepper (more)
1/2 cup sliced water chestnuts (maybe)
small can drained mushrooms (use fresh of course)
1/4 cup sliced green onions (more!)
1   2/3 cups mayonnaise  (whoa!)
2 Tbs. lemon Juice
1/2 tsp salt

1  1/2 cups crushed potato chips, slivered almonds and/or chopped cashews
1/4 cup grated parmesan
Mix casserole ingredients and place in a 9×12 baking dish.  Top with  topping.  Bake at 350 degrees for 20-30-minutes.
