Green Pizza

based on a recipe from EatingWell: September/October 2009

Serves 1.

1 whole wheat pita bread
1/2 cup chopped broccoli florets
1 Tablespoon water
1 ounce spinach or arugula, any tough stems removed, chopped (about 1 cup)
Pinch of salt
Freshly ground pepper to taste
2 Tablespoons prepared pesto
1 or 2 oz. shredded part-skim mozzarella cheese

Toast pita until crisp.

Meanwhile, cook broccoli and water in a large skillet over medium heat, covered, until the broccoli is crisp-tender, about 3 minutes. Stir in arugula or spinach and cook, stirring, until wilted, 1 to 2 minutes more. Season with salt and pepper.

Spread pesto evenly over the crisp pita (you can add a spoonful of marinara or pizza sauce on top of the pesto if you like), top with the broccoli mixture and sprinkle with cheese. Broil until cheese is melted.  Cut into wedges or strips and enjoy.
