To Try: Motherwell Meatloaf

Motherwell meatloaf, immortalized in THE HUSBAND BENCH:

Preheat oven to 350 degrees F.

Mix together:
1 lb ground beef
1/2 lb pork sausage
1 cup breadcrumbs
1 medium onion, diced finely
1 egg
1 cup milk
1 can tomato soup

Bake 1.5 hours.  Pour off fat after the first hour if necessary (often the meat is so lean you don’t need to, though).  Note:  I use 1/2% milk and store-bought breadcrumbs usually so I use a little less milk.  Since I bought one of the self draining pans, I’ve cut about ten minutes off the baking time, as well.

Sometimes I use four small pans instead of one large; I bake one and freeze the other three unbaked.  A small loaf takes about an hour and ten minutes to bake.
