To Try: Becky’s Meatloaf

I use a modified version of the “Ann Landers Meatloaf Recipe” from the “Square Meals” cookbook by Jane and Michael Stern.

 

2 lbs. ground beef
3/4 cup catsup
1-1/2 cup dry bread crumbs
1/2 cup warm water
2 beaten eggs
1 teaspoon Worcestershire Sauce
1 envelope Lipton Onion Soup mix*

 

*I guess that would be the Katie Rose ingredient.

 

Mix it all together and pack it loosely in the crockpot.  Cook on low for about 8 hours or until it is as done as you like it.

 

The original of the recipe calls for 1 lbs. hamburger and 1/2 lbs. of pork  and 1/2 lbs. of veal, but I am always forgetting the pork and I refuse to eat veal (I always have ground beef on hand). It also calls for baking in a 350 degree oven with strips of bacon laid over it, and pouring a can of tomato sauce over it.  I don’t like to do the tomato sauce because it tends to scorch.  With the crock pot, I can do a Mary Fred and just toss it in and go do something else.

 

It comes out of the crock pot very tender and moist.
