Cheddar Puffs with Scallions and Cayenne

This is rather a lot of work (lots of stirring) but they are very popular!  The flavors are too subtle for my taste though. Maybe I need extra-extra-sharp cheese?

1 stick butter
Big pinch of salt
¼ teaspoon cayenne
1 cup all purpose flour
2 large eggs
4 large egg whites
1 cup grated extra-sharp cheddar
½ cup thinly sliced scallion greens

Adjust oven racks to lower and upper-middle positions and heat oven to 400 degrees.  Line 2 baking sheets with parchment paper or grease the sheets.

Bring butter, 1 cup water, salt and cayenne to a simmer in a medium saucepan.  When butter has melted remove from heat.  Add flour all at once and beat with a wooden spoon over low heat to form a thick dough.  Transfer to a medium bowl.  Beat in the eggs one at a time.  Then beat in whites in 2 additions, making sure the first is incorporated before adding the second.

Cool dough to tepid, then stir in cheese and scallions.

Spoon dough in 1-tablespoon portions onto baking sheets, spacing about 1” apart.  Bake until crisp and golden, 25-30 minutes.  Serve warm.

May be made up to 8 hrs ahead.  Recrisp in a 300-degree oven for about 10 minutes before serving.
