Roast Pork Tenderloin

Remove silverskin.  Sprinkle with salt and ground black pepper.  Heat an oven-proof skillet over medium-high heat.  Add 2 teaspoons olive oil.  Sear on two sides, then roast at 325 degrees F for 35 minutes.  Let rest for a few minutes before slicing 1/3″ inch thick, slightly on the diagonal.
