To Try: Peanut Butter Cup Pie

Author, Maribeth Abrams describes this dessert as “dreamy and creamy” and we couldn’t agree more!

This recipe is very similar to Alton Brown’s Moo-less Chocolate Pie, which is yummy.

  • One 12-ounce package extra-firm silken tofu (1½ cups) *
  • 1/2 cup natural smooth peanut butter
  • 1/3 cup pure maple syrup
  • 2 teaspoons vanilla extract
  • 1 cup dairy-free chocolate chips, melted (we used regular dark chocolate chips) *
  • 1 graham cracker crust (check out our healthy homemade pie crust)

1. Put silken tofu in a food processor and blend until smooth, about 1 minute. Add the peanut butter, maple syrup, and vanilla and blend until smooth. Add the melted chocolate chips and blend until smooth. Pour into the graham cracker crust. Refrigerate for at least 3 hours or overnight before serving.

* We used regular silken tofu for the pie and it worked out just fine. We started out with a 16-ounce container and then used the leftovers for two different tofu smoothies (recipes will be on the blog next week).

* We melted the chocolate chips in the microwave. We placed them in a bowl, heated for 30 seconds, stirred, and then repeated the process several times until they all melted.
