Mushroom, Caramelized Onion, Tomato & Basil Sandwich

1 lb baby portobello or cremini mushrooms, sliced 1/3″ thick
1 large onion (yellow, white, sweet or red), sliced 1/3″ thick
olive oil
kosher salt
1 Tablespoon balsamic vinegar
several tomatoes, sliced 1/3″ thick
fresh basil leaves
1 large foccacia

In a large skillet, heat 2 tablespoons oil and saute the onion and 1/2 teaspoon salt over medium heat until completely soft and caramelized, adding water and covering with a lid as necessary.  This will take about 20 minutes total.  Remove onions from skillet and set aside in a small pan, covered, over low heat.  To the same skillet, add 1 tablespoon oil and 1 tablespoon butter over medium-high heat.  Saute mushrooms until tender and starting to brown.  Add salt to taste.

Split the foccacia lengthwise and separate the two halves.  Mix 2 Tablespoons oil and 1 Tablespoon balsamic vinegar and spread over the cut side of one of the pieces of bread.  Layer on the onions, mushrooms, tomato slices, and basil.  Slice as desired and serve warm.
