Aunt Alvera’s Pepparkakor

An absolutely delicious Swedish tradition.

1 cup butter
1  1/2 cups granulated sugar
1  1/2 Tbs grated orange peel
2 Tbs dark corn syrup
1 Tbs water
1 egg
3  1/4  cups flour
2 tsp baking soda
2 tsp cinnamon
1 tsp ginger
1/2 tsp ground cloves
blanched almonds (optional)

Cream butter and sugar.  Add egg and beat until light.  Add peel, syrup, and water and mix well.  Sift dry ingredients together and stir into creamed mixture.  Chill well (optional).  Roll 1/8″ thick on lightly floured board and cut into shapes with a floured cookie cutter.  Place 1″ apart on ungreased baking sheet.  Decorate with blanched almonds if desired.  Bake at 325 degrees for 8-10 minutes.

For a sparkly look, rolled dough may be sprinkled with sugar and pressed lightly with a rolling pin.  I don’t think I ever had any like that, but it sounds nice.
