Anna’s Famous Meatloaf

Adapted from “Look and Cook” by Tina Davis

Anna used to call meatloaf “meatlove” when she was tiny.

1 Tablespoon olive oil
1 small onion, diced
1 clove garlic, pressed
1/4 cup water or broth
1  1/2 pounds lean ground beef or turkey
3/4 cup fresh whole wheat bread crumbs
1 egg
1 Tablespoon brown sugar
1/4 cup Trader Joe’s organic ketchup
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Preheat oven to 350 degrees F.  Spray a 9×9″ pan. In a small skillet saute onion in olive oil until translucent.  Add garlic and stir for about 20 seconds.  Add water or broth and let simmer until liquid is gone and onions are completely soft.  Transfer mixture to a large bowl, add all remaining ingredients and mix gently.  Turn out into the pan, form into a 9×4″ loaf and smooth the top. Bake for one hour.  Let rest 10 minutes before slicing.
