Chard Breakfast Tacos


1 bunch chard, cleaned well and chopped
2 teaspoons olive oil
1/2 onion, diced
1 clove garlic, pressed
pinch red pepper flakes or cayenne
salt and pepper
2 Tablespoons light cream cheese
6 small corn tortillas (I love La Tortilla Factory Hand-Made Style which are a blend of corn and wheat)

Heat the oil and sautee the onion until translucent, then add garlic and cook for about 30 more seconds.  Add the chard and cook until bright green and wilted.  Add red pepper flakes, salt and pepper to taste.  Remove from heat and stir in cream cheese.  Heat tortillas, divide filling among them.

I made these as open-ended burritos, wrapped in plastic, and took them to work for breakfast.

Next time I will try spreading White Bean Spread with Horseradish & Rosemary on the tortillas first.

Also want to try baking them enchilada-style with some milk or enchilada sauce.
