1.5 pounds firm Granny Smith apples
2 Tablespoons granulated sugar
1/4 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
Peel the apples, quarter and core them, and slice 1/4″ thick or cut into chunks. Place in a slow cooker, add the sugar and cinnamon and toss to coat well. Cover and cook until the apples are very tender but not pureed, about 90 minutes on high (or 3 hours on low?). Stir in vanilla. Transfer to a bowl and let cool slightly. Cover and chill.
