Three Cheese Pasta with Zucchini and Sausage

Casserole:
1 pound low-fat cottage cheese
3 eggs, beaten
8-16 ounces Italian sausage
1 large onion, chopped
1 teaspoon olive oil
2 pressed garlic cloves
3 cups grated zucchini
8 ounces whole wheat blend rotini, cooked according to package directions
1/2 cup grated parmesan
1 teaspoon dried oregano
1 teaspoon dried basil or 1 tablespoon chopped fresh basil

Toppings:
several sliced tomatoes
1-2 cups shredded mozzarella

In a large bowl, stir together the cottage cheese and eggs.  Remove casings from sausage, crumble them into a pan and brown.  Remove sausage from pan, drain on paper towels, and add to the cheese mixture.  Wipe out pan.  Saute onion in olive oil until soft, adding the garlic during the last minute or so.  Add onions and all the rest of the casserole ingredients to the cheese mixture.  Pour into a greased 9×12″ baking dish. Top with tomato slices (or halved cherry tomatoes) and mozzarella.  Cover and bake at 350 degrees F for about 30 minutes.  Remove the cover and bake for 10 more minutes.  Let rest a minute before serving.
