Square Meal Pasta Bake (aka Beef & Vegetables)

1/2 lb lean ground beef or turkey
1/2 cup sliced onions
1/2 cup diced zucchini
2 teaspoons minced garlic
1 can (14 oz) diced tomatoes in juice
1 Tablespoon reduced-sodium soy sauce
1/2 teaspoon crushed red pepper flakes
1 cup whole wheat blend rotini
3/4 cup shredded cheddar cheese

Preheat oven to 350.  In a large non-stick skillet over medium-high heat, combine meat, onions, zucchini and garlic and cook for 8-10 minutes or until meat is no longer pink and vegetables are softened.  Drain fat; pour beef mixture into 8″ square baking dish and set aside.

Meanwhile, drain juice from tomatoes into a 4-cup microwave-safe measuring cup.  Add water to make 1 cup.  Add tomatoes, soy sauce and pepper flakes.  Microwave on high for 5 minutes or until very hot.  Stir in rotini.

Pour tomato-pasta mixture into baking dish and combine with meat mixture. Press pasta down to make sure it is submerged. Bake, covered, 20 minutes.  Remove cover, stir gently and sprinkle with cheese.  Bake, uncovered, 15-20 minutes or until pasta is tender.

Serves 3.
