Moms’ Almond Sugar Cookies

adapted from a Meal Makeover Moms recipe

Dry ingredients:
2 cups whole wheat pastry flour
¾ cup almond meal
1 teaspoon baking powder
½ teaspoon cinnamon
¾ teaspoon salt

Wet ingredients:
½ cup canola oil
¾ cup granulated sugar
2 large omega-3 eggs
2 Tablespoons honey
1 teaspoon vanilla

3 Tablespoons granulated sugar or Demerara sugar

Preheat oven to 375.

Whisk together the dry ingredients in a large bowl. Mix the wet ingredients in a mixer until well combined. Add the dry ingredients and mix at low speed until just combined. Put the 3 Tablespoons sugar on a plate or in a shallow bowl. Using a small scoop, form dough into 1” balls and dip the dome in the sugar. Place on greased cookie sheet. Bake about 8 minutes until barely colored. Transfer to a wire rack to cool.
