Cinnamon Cottage Cheese Muffins with Zucchini, Raisins, Oranges and Walnuts

Adapted from

1 egg
1/4 cup canola oil
1/3 cup granulated sugar
1 cup small curd, low-fat cottage cheese
1 orange, zested, then peeled, segmented and chopped
1 medium zucchini, grated
1 cup whole wheat flour or whole wheat pastry flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons cinnamon
1/2 cup golden raisins
1/2 cup chopped walnuts

1/2 teaspoon cinnamon
1 tablespoon granulated sugar

Beat egg, oil and sugar together. Add cottage cheese, orange zest, chopped orange, and zucchini, and mix until blended. Combine and add the next 6 ingredients and stir until dry ingredients are just moistened. Do not overmix.

Scoop batter into a greased 12-cup muffin tin, and sprinkle muffin tops with mixture of cinnamon and sugar. Bake in a 350 degree F oven for (30?) minutes, or until a cake tester, inserted in center, comes out clean.

Allow to cool for 15 minutes, then remove from pan and continue cooling on a rack.

    • Hope you enjoy it, Janice! It’s a little on the sandy side, but I like it. I’ve never added chopped fresh orange to a bread before this recipe. I was happy to find this recipe to use up some cottage cheese I didn’t feel like eating plain. Let me know what you think.
