Buttermilk Bran Muffins

The first time I ever had (or even heard of) a bran muffin was on a family trip to visit Grandma and Grandpa Euler in Seattle when I was probably 12.  We visited some friends of theirs for lunch and were served shrimp salad and bran muffins.  I think I had three.  This is my own variation, which I bake on the weekends and store in the freezer, and take to work for breakfast.

2 cups organic bran flakes cereal
1-1/2 cups low-fat buttermilk
1/4 cup orange juice
1 egg
1 Tablespoon orange zest
1/4 cup canola oil
1 cup whole wheat flour
6 Tablespoons granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup raisins
1/2 cup chopped walnuts

In a large mixing bowl, combine bran cereal, buttermilk, orange juice and orange zest.  Let stand about 5 minutes so cereal can soften.  Add egg and oil and blend well.  Add flour, sugar, baking powder, baking soda, salt, raisins, and nuts, mixing only until combined.  Portion evenly into 12 2-1/2″ muffin cups coated with cooking spray.  Bake at 400 degrees F for about 20 minutes or until golden brown.  Cool in pan for 10 minutes, then remove to wire rack.
