White Bean Salad With…

Adapted from myrecipes.com

Serves 6


2 cups coarsely chopped skinless roast turkey or chicken or large shrimp
1 cup chopped tomato (or halved cherry tomatoes)
1/2 cup minced red onion
1/3 cup basil chiffonade
2 (16-ounce) cans cannellini beans, rinsed & drained
2 cups cooked pasta (optional)
1 can artichoke hearts, drained and quartered lengthwise


1/4 cup red wine vinegar
2  Tablespoons olive oil
1 Tablespoon fresh lemon juice
2 teaspoons Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
2 garlic cloves, pressed
