Pumpkin Chocolate Cake

Based on a recipe from WholeFoodsMarket.com
1 cup whole wheat pastry flour
1/2 cup cocoa powder
2 Tablespoons ground flax seed
2 teaspoons pumpkin pie spice
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2/3 cup chocolate chips
1/3 cup chopped walnuts

1/4 cup canola oil
1 cup granulated sugar
2 eggs
1 (15-ounce) can pumpkin puree
1 teaspoon vanilla extract

1.  Preheat oven to 350.  Grease an 8″ square baking pan.

2.  In a large bowl, whisk together flour, cocoa powder, pumpkin pie spice, baking powder, baking soda and salt.  Add chocolate chips and nuts.  In a seaprate bowl, whisk together oil, sugar, eggs, pumpkin and vanilla.  Whisk flour mixture into pumpkin mixture until well combined, then transfer batter to prepared pan.

3.  Bake until cake pulls away from the sides of the pan and a toothpick inserted in the center comes out clean, 40 to 50 minutes.
