Pasta with Turkey Sausage and White Beans

From Nancy Clark, RD

5 servings

1 pound turkey sausage, casing removed
1 small onion, diced
1-2 cloves garlic, pressed
1/8 teaspoon crushed red pepper flakes
12 oz. uncooked pasta (shells, ziti or rotini)
1  14-oz. can diced tomatoes
1  15-oz. can canellini beans, rinsed & drained
5 teaspoons cornstarch mixed into
1-1/2 cups low-fat milk
1/4 cup grated parmesan or romano cheese

Sautee onion, garlic and turkey sausage over medium heat for about 10 minutes or until done.  Add red pepper flakes.  While sausage is cooking, cook the pasta and drain.  To the sausage, add the tomatoes and beans.  Heat through, then add the milk mixture.  Stir until thickened, then add the Paremsan.  Add the cooked pasta.  Toss well and let set for a few minutes for the flavors to blend.
