French Toast

Just waiting for butter and lingonberries…

3 eggs
1/2 teaspoon salt
2 Tablespoons sugar
1 cup milk
a few big shakes of cinnamon
6 slices whole wheat bread.  If they are very fresh, dry them out a little first so they soak up the custard mixture better.  You can leave them out overnight, or bake them in an oven or toaster oven on low for a few minutes.

Preheat griddle to 350 and spray with non-stick cooking spray.  Beat eggs, salt, sugar, milk & cinnamon well.  (I mix it in a saucepan that is just large enough to for the bread slices to lie flat in the bottom.)  Soak bread until soft, turning once.  Cook on hot griddle, turning once.  Serve with butter and syrup or lingonberry preserves.
